Final outcome: I hardwired it.
First I tried to install as a plug in with a new receptacle. I thought the electrical gods had smiled on me as I had all the parts in my stash including a handi box and NIB GFCI receptacle.
Got the new box installed and everything wired up..then discovered the gfci rec is too big (deep) for the handi box. Plan B: pull everything out and hardwire.
Already had a switch for the disposal so good on that front.
