The kneewall doors are all solid wood, raised panel. There will be R19 in the kneewalls. Will it raise the R-value of the doors enough to make a difference to glue either foam board or fiberglass insulation to the back of the doors?

Sure it will help. But, what will help even more is if you weatherstrip the doors so there is no air leaks.
