  Wiping Varnish over Stain

I'm finishing two bath vanities, dark cherry stain per SWMBO's stated desire, and mixed my own oil based poly wiping varnish by thinning with MS. Wiping varnish works great on test pieces, but when applied to the stained wood it also thins out the stain and changes the color that I strove mightily to make consistent on the two cabinets and on frame panel wainscoting. Stain has dried for 3 days. How can I prevent changes in color?

My thought is to either let the stain dry further, or apply a spit coat of shellac as a sealer prior to applying the poly wipe on. Thoughts or other suggestions from the brain trust?

PS, I love the woodworking, hate the finishing.

Condo workshop.
After a dozen years, I received my first noise and symptomatic complaint from my neighbor on Sunday.
He claims his skin has a rash and wants to know what I am doing in my shop.
All I have done this past week is turn some cherry in the lathe. and rout some dovetails. Both, admittedly dusty. But, I have done this in the past without issue.

I am still trying to figure out what his noise issue is, as his complaint does not agree with my activities. But that is beside my question.

So, has anyone here gotten a bad reaction from Cherry? And what did it do to you?

  "Free Wood" you earn

This is over 3000lbs of maple plywood and 10-12 sheets of maple colored slat wall. It was all assembled fabric cabinets 36 hours ago at the local bankrupt Hancock Fabrics building. A buddy and I disassembled them and removed all the nails and screws and hauled them home (three more than full truck loads) to get a new life as storage project making materials for the new shop and any other project we think up. That 16.5 hours of work for me and five of those hours working with my buddy Tony, and we saved about 40 sheets of 4x8 maple plywood from a landfill. Happy Labor Day weekend.

  4' Led tubes

6 months ago or so, I replaced 2 4' fluorescent tubes with led ones. i like the light output. They were the ones where you bypass the ballast. Can't see why anyone would want to still have ballasts to go bad.

  HANDTOOLS: Chrispy PreWar #4 and Jennings Bits

I finally figured out the right angle and setup to grind chipbreakers on my Tormek; this is  less chance for error than my prior technique using stones and files for tuning the chipbreakers.  Anyway, this is a very crispy smoother, prewar Type 16, plenty of iron, 98% japanning, wood solid, sole and mouth good, no apologies whatsoever; this is marked "imperfect" from the factory, the only thing I can find that fits that bill is a couple of small inclusions in the casting at the heel, certainly nothing that impacts use at all, but it was not "perfect"  during the period when Stanley really gave a darn about their planes.  Anyway, its a really nice plane, and I squared up and sharpened the iron on the Tormek and it works just like it should.  More attention to the iron will only improve performance.  

Just to say, all the planes I post (except for "barn fresh") have been fully disassembled, cleaned thoroughly, tuned to perform, and tested.  Pics:

An add-on: a partial set of Russell Jennings 100 style with the fine lead screws for hardwoods, I think there is one Swan in there (even better maker, actually), in sizes 5, 6, 7, 8, 9, 10, 12, 13 and 16, these are all in 16ths graduations.  All have good to very good flute length, and none of the lead screws are buggered up, see the closeup pic below.
