Bunk beds just about done...now I need bed bolt covers

Get a dowel that fits the hole loosely and imbed a rare earth magnet in the end. The magnet will stick to the bolt and hold the plug in. Then you can put a decorative block on the other end of the dowel. Actually you wouldn't even need a dowel. A square peg that fits in the round hole would work just as well.

I did something like this on a bed I built for my daughter but I made the plugs look like the end of a through tenon.
