Oak makes great pins. You want dead-straight grain and bone-dry heartwood. Other strong hardwoods (hickory, hard maple, etc.) are strong enough but more difficult to shape.
Drawboring is a great technique and a very sturdy joint whether you glue it or not. I do recommend making a test joint or two if this is your first go-around. A ruined joint on a headboard or footboard is frustrating and expensive.
